In the late 1980’s chef and restauratuer David Weiss opened a small Mexican restaurant in the quiet college town of Tivoli, NY. Located in the uppermost part of New York’s Dutchess County, Santa Fe Restaurant has become a Tivoli landmark and a draw for both locals and Hudson Valley visitors alike.

Inspired by the rich culinary flavors that he found during his many visits to Mexico, Weiss created a menu that features the country’s diverse and vibrant flavors while highlighting the freshness of the ingredients in those dishes. These carefully crafted menu choices, along with Santa Fe’s festive atmosphere and exceptional value, has earned the restaurant a reputation of being one of the best in the Hudson Valley for over thirty years.

In 2012 Weiss collaborated with restauratuers Jim and Annie Demosthenes to bring the Santa Fe concept across the Hudson River and into Kingston's historic Stockade District. Like the original location, Santa Fe Uptown's loyal following keeps going back for the from-scratch margaritas and innovative tacos. A few years later the team opened Santa Fe Woodstock, the largest of all the locations. Santa Fe Woodstock can host private parties of all sizes, either in its intimate lounge or spacious event room. Additionally, the Woodstock restaurant includes a few burger choices on its menu - which was the start of something else altogether! In 2021, Santa Fe Burger Bar was opened in Rosendale, NY. It is a restaurant known for its juicy burgers, colassal amazing shakes, extensive selection of craft beers and well-satisfied guests. Emily Venditti and Kelly Guerra, both long-time Santa Fe employees, have joined on as business owners.
